Garden Produce

We have been keeping pretty busy with garden produce lately!  At times it is hard to decide which vegetable to work on first! :) This is a good problem to have though and I am so grateful for the bounty God has given.  
  
 Tomatoes galore!  Not only have we enjoyed them fresh with meals, but we have also canned a batch of salsa (still have several cans in the cupboard from last year, so we didn't need to can very much this year.), froze a batch of roasted tomato sauce, and put many many bags of chopped tomatoes into the freezer. It will all come in very handy in the winter months!

Zucchini is another thing we have had a lot of and it has been fun to try some new zucchini recipes! There are so many ways one can use this prolific vegetable!


 Eggplant has such a wonderful flavor and we have enjoyed it in various ways.  Yesterday I made some Baba Ghanouj(roasted eggplant dip).  I always enjoy making that each year when our eggplants are ready!  

The cantaloupe plant produced well this year.


Then there is lettuce, broccoli, green beans, etc. :)

One of the wonderful things about fall approaching is that the apples are ripe! Apple Pies are a wonderful thing. :) We have also used them in our fruit smoothie in the mornings.  And a majority of the apples will end up in our freezer; cored, peeled, and sliced ready for use in the winter.  

A couple nights ago the temperature dropped below 30 degrees, so the parts of the garden that we didn't cover are done for the year and needs to be cleaned out.  The seasons come and go so fast!  
Talking about seasons.  Dad has been busy hauling and stacking hay in our shed for the winter.  It is always so nice to get a winters supply of hay in before the snow flies.

What a feast for the eyes this bounty of the Lord affords! You are quite the gardeners; I think there are many things I can learn from you :) Sorry about the frost, but there is an end to the garden each year, giving us a measure of rest. Thank the Lord for His tender mercies.

Thank you for your comment! Yes, even though it is hard to see the gardening season come to an end, it will be so nice to have a rest from it during the cold winter months. :)

I just had to say...I have never grown a decent cantaloupe in my life. Next year I will have to ask you what you do. Our vines get attacked, and they just die :( Do you use something special on the squash bugs?

Well, we haven't had problems with squash bugs for the past few years anyway. We just plant the plants and mom does "water" them with some of our older goats milk a few times through out the growing season. They produce great! They seem to like years where there is more rain and moisture.
I hope that helps some.

I have had a friend send me a piece on 'watering' with goats milk a while ago!! It struck me a right at the time...and remember Almonzo Wilder 'milk-fed' his prize pumpkin in one of the Little House books. (The Long Winter, maybe?) Thank you for giving that advice :)
